Description: Efrain Botrel Alves has coffee farming in his blood, growing up in a family with a long history of coffee production, over 130 years. His father is well-known for his expertise in in the area. Efrain took to the study of coffee from a young age. His main areas of interest were in new technologies to improve quality with concerns on sustainability and the environment. With generations of knowledge and his own study of coffee production, Efrain started Fazenda Águas Claras in the year 2,000. From it’s inception, Águas Claras has been an example of quality planting only the varieties that Efrain found to be the best for the region. He has also made it a top priority to restore much of the native vegetation, and preserve the springs that run through the farm.

This lot started with a wash, to separate out overripe and underripe cherries, and then went through a 36 hours anaerobic fermentation, in cherry. After fermentation, the coffee is taken to a static box dryer where it dries over a 15 day period. Once fully dried, the coffee rests for 30 days in wooden boxes before going through milling for export.

This is a fun one from Brazil, we get notes of Dates and Berry Pie with a Malty sweetness, and a linger of Honey Nut Cheerios™.
