Description: This lot comes to us from *inhale* Cooperativa de Caficultores del Norte de Nariño *exhale*. Located in Nariño, Colombia, the cooperative has 1,500 members who’s farms start at 1,500masl, and go all the way up to 2,100masl, thanks to Nariño’s proximity to the equator. Farms delivered to the coop average 2 hectares (about 5 acres) in size, in the San Lorenzo and Tamiango municipalities. The region is near the Volcan Galeras, meaning the soil is nutrient rich from the volcanic ash. 

Once at the mill, this lot is pulped and then fermented in water for 12-24 hours, depending on weather conditions. After washed clean of it’s mucilage, the coffee is transferred to dry in parabolic dryers, protecting it from harsh sunlight and/or rainfall.

This lot was a surprise on the cupping table, with the lot size, you would expect it to cup like a blender (lower scoring lot). While this coffee would be a great addition to a blend, it would also shine as a washed Colombian single origin. When cupping our production roasts, we get lots of body and a sweetness that reminds us of caramel and honey, juiciness like that of citrus and maybe even mango, with a finish of chocolate covered almonds and cola.
