Description: Finca La Concepción is a family operation run by Manuel as the voice that brings new initiatives and Linda (wife of Manuel) is the counterpart who supports Manuel. Together they share and evaluate ideas to continue improving their farm. At Finca La Concepción coffee is harvested in lots, and each lot is processed using a different processing method which are applied and then followed up by a cupping evaluation to monitor quality. In 2015, with technical advice and productive exchanges, Manuel decided to start experimenting with new processing methods such as molasses and natural coffees. He began to apply different periods of fermentation in small quantities to test the results, and by using appropriate cupping methods, was able to identify the best method to improve the quality and flavors of coffee.
