Finca Santa Teresa (FST) is a coffee farm and mill nestled high in the cloud forest near the Volcán Barú; Panama’s highest peak, adjacent to La Amistad National Park, a UNESCO World Heritage Site. The Farm occupies 237 acres of stunning forest between 1400-1900m above sea level.

A regular finalist in the Best of Panama competition, with more than a dozen awards in the last decade, FST produces a range of premium specialty coffees, including Gesha, Caturra, Catuai and Pacamara varietals. 

The Farm’s terroir – rich volcanic soils, high altitude, weather systems driven by the Pacific and Atlantic and a series of ridges and valleys – makes for incredible coffee.

Batista is a mature plot of Gesha trees sitting at an average elevation of 1,500 MASL. These Gesha trees stand tall at about 15 feet, which is like the 6’4” human equivalent (this is a joke, don’t run numbers on this). As cherries reach peak ripeness, they’re handpicked and brought to the FST mill to be dried. Sun drying naturals in this region is low and slow, a good thing for green coffee shelf life. This coffee is dried on raised beds for 4-6 weeks, and then finished in an oven to ensure even moisture content before it’s hulled.

This was our top scoring Gesha from this season, the table we cupped it on was great, but this specific coffee was really special, it had the sweet sweet taste of herd immunity (kidding)… We tasted a lot of things in this coffee, we all picked up a prominent strawberry note, with some hard candy sweetness, tropical fruit, and vanilla in the finish. It’s worth that noting this being our top scoring Geshas of the season, effectively means that it is one of our highest scoring coffees period this season. Enjoy!
