We’ve never been to these pools, but it’s on our list for our next visit to Huehue. Huehuetenango itself is the highest growing region in Guatemala, and one of the three that are not volcanic. The drive from Guatemala City is long, but really beautiful. We did it in the back of an oversized truck bed, which sounds rough, but on the dirt roads, standing, holding onto a railing is much more comfortable than bouncing around inside the vehicle's cabin. The area has lots of rivers and streams, and you pass through a number of small towns where you fill up on gas, and in our experience, grab delicious homemade tamales. The natural water in the area serves producers well, with the remoteness of Huehue, most producers have to process all of their own coffee where they’ll make use of that fresh water. This region has many microclimates with warm air sweeping up from the Plains of Tehuantepec in Mexico to the cool air descending from the Cuchumatanes Mountains. Finca Las Cascadas, named for the many waterfalls on the finca, was called by the previous owner, Finca Belgica, but when E-Cafe took it over they planned not only to improve the name, but the coffee quality as well. And when a group that took another Chiapas farm (Finca Las Chicharras) from unheard of, to a COE winner in the span of 3 years, you have to take them serious. Not only do we think that E-Cafe is producing incredible coffee on this farm, they’ve taken to initiative to be one of the few people in Mexico producing naturals. E-Cafe had only produced washed coffees, until 2018 when a specialty coffee importer from Taiwan requested a natural lot from Finca Las Cascadas. The forward thinking doesn’t stop at coffee processing with E-Cafe, they have social development projects going on for the people who work for them, and the people who lives in their surrounding areas. Their main operations outside of coffee are the Icathus School, a boarding school for underprivileged children, affordable financing offered to producers, and working with community and government leaders to improve infrastructure, education, and health. These operations are funded by the government and the sales of their coffee.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eAfter handpicking ripe fruit, this lot is pulped and sent to fermentation tanks for up to 36 hours and then washed clean of mucilage. The average smallholder has approximately 250 trees, normally in their backyards. Each tree yields an average of 1.5 kilos of cherry so the average producer sells about 200-300 kilos of cherry annually. In order to encourage farmers to renovate their farms, our export partner purchases seeds from the Institut des Sciences Agronomiques du Burundi (ISABU), establishes nurseries, and sells the seedlings to farmers at or below cost. On top of this, producers are able to deliver cherries directly to washing stations or to collection sites which are situated to save producers in travel time and costs.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAfter receiving cherry and sorting, cherry is pulped within 6 hours of delivery. The machine can process up to 3 tons of cherries per hour. During pulping, cherry is separated by density on a Mackinon 3-disc pulper outfitted with an additional separation disk.  The coffee is then fermented in water from a nearby stream for 10-12 hours, depending on ambient temperature. A small sign on the fermentation tank keeps track of each lot. The sign logs the date of cherry purchase, grade of the bean and the time when fermentation began. Trained agronomists check the beans by hand regularly to ensure fermentation is halted at the perfect time. The station workers trample the parchment for 30 minutes in the fermentation tank. This trampling process helps to remove mucilage on the fermented parchment. After this, the parchment is given fresh water to move it into the washing-grading canal, where it is washed. After fermentation is completed, coffee is run through washing and grading canals. As the beans flow through, wooden bars that are laid across the canal prevent beans of specific densities from passing through. These bars are spaced across the channel. While the first blockade stops the most-dense beans, the next is arranged to stop the second most-dense beans and so on. In total, the channel separates beans into seven grades according to density. After washing, this parchment is poured onto wooden trays or nylon bags and carried to the drying tables, each in its separate quality group. Each tray and nylon bag of parchment keeps its traceability tag with all info. The beans are then transported to the drying tables where they will dry slowly for 2-3 weeks. Pickers go over the drying beans for damaged or defective beans that may have been missed in previous quality checks. Usually, each table holds 800kg of parchment. In the peak of the season, the maximum load for a table is 1000kg. Each table has a traceability tag with the lot info. The parchment is left to dry from sunrise to sunset and is covered with a sheet during the evening or when it rains. During this time, parchment is turned regularly. Monteclara comes from the Nuevo Oriente region of Guatemala, in the far eastern area of Guatemala along the Honduras and El Salvador border. Nuevo Oriente is a relatively new coffee growing region, only beginning cultivation in the 1950s. The regions volcanos are inactive, but they remnants of previous eruptions have created rich volcanic soils perfect for coffee production. Coffee in this region grows between 1200-1600 meters and the weather is cloudy and rainy. This is a challenge for harvest time as drying times are extended in higher humidity environments. Thus, depending on the weather, coffee harvests can be dried either on patios or in guardiolas. Despite the humidity, the slower growing coffee of Nuevo Oriente is practically bursting with flavor. This coffee comes from a multitude of smallholder farms in Oriente, many of whom have been farming the same land for multiple generations.
