Great roasting coffee, I have a small roasting business and this is the favorite for two of my clients.
I'm a manual pan roaster meaning that I am part of the whole roasting process one stir at a time (hotplate, covered/vented non stick saucepan, spatula). These heirloom beans have a really beautiful, almost floral-like smell when roasting that is unique to green coffee (every variety has a different, early roasting smell but these beans are truly special). If you haven't experienced the full beginning to end roast cycle, try going manual sometime for a really fun and rewarding treat (albeit don't plan on going anywhere for about 90 minutes). Regardless of how you roast these beans, I think you will find these some of the best of the Ethiopian heirloom beans around. Fresh crop, roasts pretty evenly/quickly and that special heirloom taste profile reward at the end- wow!
