Description: Hunapu is the indigenous name that ancient Mayans gave to the startovolcano in Antigua, Volcán de Agua. Our export partner, Zelcafe, works with roughly 300 farmers in this region and embraces this ancient name to represent the coffee they produce. Once ripe cherries have been harvested, it’s delivered to the Bella Vista Mill. At the mill, coffee is first separated by day of picking, variety, and elevation. Once lots are defined, coffee goes through densimetric sorting to remove low density cherries. The ripe, dense cherries are then taken to raised beds for drying. After 3 days of drying under direct sunlight, the coffee begins getting frequent raking to keep drying slow and even. The coffee gets down to ideal moisture content (10.5%) in a bout 20 days, and is then allowed to rest for another 20 in the warehouse before being milled for export.
This is our first year bringing in Hunapu Natural, and it will not be our last. The cup is clean, and fruity with notes of Banana Bread and Berry Pie, brightness of Lemonade and Raspberry, with a lingering sweetness of Honey.
