Description: While coffee is grown in 15 states in Mexico, 90% of it comes from four states: Veracruz, Oaxaca, Puebla, and Chiapas. This organic coffee comes from the Jaltenango region of Chiapas. Jaltenango is a municipality within the Socioeconomic Region La Fraylescana and has incredible biodiversity, rich with jungle life.

There are more than 500,000 coffee farmers in Mexico, with 95% of them being smallholders with less than three hectares, and 85% being indigenous Mexicans. Mexico is one of the world’s largest producers of certified organic coffees.

Chiapas borders Guatemala, and is contiguous with Huehuetenango, so these coffees tend to have similar cup profiles, having bright and clean acidity, with light fruit and cocoa notes.

Cheering the Chiapas

This caffeinated coffee has round, full flavor.

not a lot of flavor

This coffee from Mexico did not carry a lot of flavor. Beans from Mexico are usually kind of chocolatey, but this one was just too subtle in flavor. Usually, after about 10 days, I use it for espresso, but these beans were stale by then.

Mexico for the win

Very smooth coffee in Pour Over. Great as espresso.
