Description: Red Plum is an anaerobically processed lot by Diego Bermudez from his farm, El Paraiso in collaboration with the Santuario Project. This lot went through two fermentations, both anaerobic. The first was for 48 hours in cherry at a regulated temperature around 18℃. The coffee was then depulped and fermented again for another 48 hours in its mucilage.
Red Plum is a really unique experience,. We get lots of really clean fruitiness with notes of Peach Cobbler, Strawberry Hard Candy (like those ones in wrappers that look like miniature strawberries), velvety mouthfeel, and a sweetness of Butterscotch.
