Description: This is our first custom blend made with the fine folks at Finca Santa Teresa (FST). We’ve loved working with FST year after year, so this opportunity to put together a blend was too fun to pass. This is a blend of coffees from our five favorite plots cupped earlier this year. The profile leans towards the fruity side, while maintaining the clean cup and brightness of high elevation washed Panamanian coffees. To achieve this washed process the cherries are sorted straight after picking and are then placed into water floatation tanks to remove “floaters”, which are less dense cherries. Next the pulping process begins — the skin of the fruit is mechanically removed from the bean, and then cherries are placed in fermentation tanks. During the fermentation process a natural enzyme occurs that aids in the removal of the mucilage. The coffee is then washed again and the next day taken to raised beds to begin drying where it stays for about 12 days.

This multi-plot blend from FST highlights the operation as a whole to produce a unique coffee that features their whole operation. We love the profile of this one, it’s got something very chuggable about it with notes of Red Apple and Cola, and lots of sweetness reminding us of Marshmallow, and a sweet linger like Milk Chocolate.

Ok not the greatest batch but pretty ok

I tested this FST Caturra-Catuai lot next to the FST Jacaranda and Brooklyn all Caturra, and no surprises here. The Jacaranda was better—more flavorful, more distinct in flavors, better balance in acidity and more body. This one seemed a little muddy overall. I would guess it would rate several points below the slightly more expensive Jacaranda.

Classic Central American Mild Goodness

I was nicely impressed by the quality of this lot of Caturra/Catuai. It isn’t hard to roast a City+ batch that is fairly uniform, and there are few defects. After a 3-day setup, the sweet, slightly nutty pour over showed it can blend or stand on its own as a single origin. It’s that mild, sweet, nutty profile that you naturally think of when you think Panama or Costa Rica. Basically, it’s delicious.

Easy to drink

I roasted this med light with medium development time. It's very smooth and would be a wonderful daily cup. I'm very new to roasting and have not developed my taste buds yet so I cannot taste the same flavors as the cupping notes indicate. It does have a slight sweetness to it.
