First: bean quality was great and I found the whole batch to roast evenly and consistently.
Second: I roasted this a few times to check out the range of flavors from City+ to Full City+. The Lime Acidity notes come through nicely on the City+ as expected. I found that the coffee never got bitter - even when roasting just up to the 2nd crack. The mild/gentle flavor of this Guatemalan bean is what stands out about this coffee. (I feel like this bean is the exact opposite of a Nicaraguan Red Bourbon).
Finally: You have to appreciate this bean for what it is. If you want a deep and dark flavor - look elsewhere. This is a smooth, relaxing, afternoon coffee.
Roasted on the lighter side and enjoyed as an americano or for milk based drinks
Consistent in most roasts, smooth, bitter free and a fresh finish to every cup.
