This lot is a blend of coffees from two producers in the picturesque region of Águas Paulistas. Coffees grown by Luis Eduardo de Bovi and Loris Ramos Heleno were chosen by Capricornio’s quality control team (a Brazilian export operation) for their complimentary flavor profiles. The goal with the coffees blended by the team is to gain quality, and consistency to ensure that flavor profiles remain the same from year to year.
The Águas Paulistas region is in the central east of the state of São Paulo which borders the also beautiful, Rio de Janeiro. This region is different from most of Brazil in that many of the farms are smaller than usual, and most coffee is picked by hand, instead of by machine like most of the coffee in the country. The microclimate combined with these producers knowledge of producing naturals and pulped naturals makes for a Brazil with lots of character. In this one we taste a mild fruitiness reminiscent of plum, sweet creaminess of caramel and milk chocolate, and nice backbone of hazelnut.
