Description: Inzovu is a blend named after the Kirundi word for a wise elephant. The origin team who put this lot together are something of a smart group themselves. Historically,not many washing stations in Burundi produce volume lots of naturals, although this has been changing in recent years. Inzovu is a smart solution to offer a Rain Forest Alliance certified coffee that’s consistent in quality and volume. The coffees added to this blend change from year to year to maintain the quality of the cup, but each lot is traceable to the producer, ensuring that producers are paid fair prices. Once cherries are purchased from a farmer, the coffee will be floated and low density “floaters” will be separated and sold as a b-quality coffee. The coffees that pass this stage of density sorting are then sorted again for damaged, underripe, and overripe cherries. Immediately after sorting , cherries are taken to drying tables where they dry for 3-4 weeks. Mill workers sort through the coffee even as the cherries are drying to make sure that only the highest quality cherry makes it through the drying process.
When this one came across the table at Bodhi, it was exactly what we look for out of Burundi naturals. It has dense sweetness of Dried Fig and Black Cherry, with a pop or fresh Orange, and a soft linger of Vanilla with a hint of Pear.
