Description: Victor Gutierrez, owner of Finca aLa Miranda, is an accomplished producer in Tolima. He is a licensed Q grader and a leader in La Asociación de Productores Ecológicos de Planadas (ASOPEP). For the past 7 years, he has directed his energy towards growing exotic varieties on his family farm, including this Pink Bourbon lot. His efforts don’t end with growing incredible coffees, but also in experimental processing, down in conjunction with ASOPEP.
The ASOPEP association aides in the processing and marketing for over 250 smallholder producers, enabling them to reach a wider market, and receives premiums for quality. Internally, the association provides extensive education, and has a personal goal of providing it’s farmer members with the best quality of life o farmers in Tolima by 2030.
This lot cups with bright, clean notes thanks to expert processing. The coffee went through 32 hours of anaerobic fermentation in cherry before being depulped, this enhances acidity and body in the cup. After fermentation the coffee is washed clean of cherry skins and mucilage and then dried slowly on raised beds for 20 days.
In the cup we get notes of Ruby Red Grapefruit and Black Tea, with sweetness of Wild Honey (none of that fake stuff), and a clean Floral finish.
