Description: The Sugarcane (Ethyl Acetate) decaf coffees that have been coming out of Colombia are the highest scoring decaf coffees around. These coffees often score well for specialty coffee, regardless of caffeination level. The process of removing caffeine is done in country in Colombia, which has two-sided benefits. In country decaffeination is obviously better for the planet, compared to shipping coffee to Canada (for Swiss Water), and because of this we’re able to cup lots from our export partner and choose which we’d like to send for decaffeination. That brings us to this lot: Huila Sugarcane Decaf. In general, the ethyl acetate process takes a coffee and makes it slightly more sugary, while losing some of the acidity found in high elevation coffees. Prior to choosing this lot, we cupped a handful of washed coffees from a number of regions and settled on Huila as it had the brightest acidity, lending itself to this process.
