The ASOPEP association aides in the processing and marketing for over 250 smallholder producers, enabling them to reach a wider market, and receives premiums for quality. Internally, the association provides extensive education, and has a personal goal of providing it’s farmer members with the best quality of life o farmers in Tolima by 2030.
This coffee cups like with more vibrancy than the typical washed Gesha from Colombia, which was explained once we heard how it was processed. This Washed Gesha, went through a 36 hour anaerobic fermentation while still in cherry before being depulped. After fermentation and depulping, the coffee was washed clean of skin and mucilage, and dried slowly on raised beds for 17 days.
This was one of, if not the, favorites that we imported on this container. In the cup this one is dynamic, it’s interestingly lively and equally delicate. We get notes of Fresh Pear, florality of Jasmine, and a buttery quality reminiscent of Caramel.
