Description: This is Don William’s first harvest of the gesha coffee that he planted at Villa Bernarda a few years ago! The result is absolutely delicious and shows a lot of classic Panama-style geisha character with a very soft body, delicate flavor and candy-like sweetness. William Correa has done a fantastic job raising these little plants up to produce some solid coffee. His first harvest had only 150 pounds available so grab some while it is still available!
Villa Bernarda is a 12 hectare farm in the town of Jerico, Antioquia in the Northern part of Colombia. William Correa is the farm owner and works the property that has been in the family for at least 70 years! Don William has the farm organized into 17 different lots and is growing mostly 2000 and castillo varieties plus small amounts of gesha coffee and the new Cenicafe1 from the Federation.
William Correa has a wet-mill on set to process and wash cherries before being dried on patios or on covered raised drying beds. Pickers are paid premiums for only red/ripe cherries. The washing process uses 15 hours of fermentation in water before removing all of the mucilage and drying in a picturesque setting in the mountains.
