Description: The Olman Aguilera farm is owned and operated by Olman Aguilera Chaves. Don Olman has lived all his life in Lourdes, Naranjo and is married to Margot Chaves Aguilera with whom he has two children who are completely dedicated to the farm. During Don Olman's childhood, he lived in the farm with his dad, Pedri Aguilera Arias, who bought this farm after years of hard work and thanks to the local banks who financed him.
Once the harvest season ends at the farm, they go into pruning to eliminate old and damaged branches, open up the plants for sunlight and mitigate diseases. During March-October, they do 4 foliar fertilizations and 4 soil fertilizations. Then, at the beginning of November, they do a weed control in order to prepare the farm for the upcoming harvest season. Their workforce increases from 3 regular workers during non-harvest times up to 40 temporary workers to assist during the harvest. Once the coffee is harvested, it is taken to La Eva Mill where the cherry is received, weighed, and then washed with clean water to eliminate any foreign matter. Immediately, the cherries are taken to the patios for drying. This normally takes between 15 and 20 days depending on the amount of sunlight. Once the coffee reaches its correct humidity, it is stored and kept for resting until it is time to export. The peeling of this coffee is very slow and complicated but the end product is a beautiful natural-processed bean.
