As a home roaster I continue to look for green beans with flavor notes I haven't tried before. The flavor note that caught my attention was cinnamon. I roasted this coffee to about thirty seconds after the end of first crack with a fast roast profile. I brewed the coffee with a V60 and as espresso. This coffee was really good with both brew methods. As a V60, the flavors changed as the coffee cooled. While it was hot, the cinnamon notes were prominent and the coffee was more savory. I also tried pushing the grind setting finer and this flipped the flavor notes with sweet fruit acidity up front and slight cinnamon finish. As it cooled, sweet and citric fruit notes really came out. As espresso, the coffee had as sweet fruit acidity up front with a cinnamon spice finish. I really liked this coffee.
Fluid bed roaster does provide a nice smooth cup.
Great coffee. Sweet, cinnamon. It is selling well. I bought 80lbs of it when it was on sale.
