Description: Located on the slopes of the San Salvador Volcano in the Bálsamo-Quetzaltepec region, Finca Las Barreras was bought four years ago by Joaquin Palomo. An agricultural economist who has been cultivating coffee for 3 decades, Joaquin has a long-term vision of creating sustainable farms by growing high quality coffees and keeping immaculate farms. The 56 hectare farm is kept by 10 permanent workers, and employs 120 people during harvest season. The farm grows Bourbon, Pacamara, Icatu, Maragogype, and Yellow Catuai, this lot in particular is from high scoring day-lots from a Red Bourbon plot.
This natural was dried for 15 days, starting on clay patio, and finishing drying on raised beds before milling and sorting at the El Borbollon dry mill.
The naturals from El Borbollon are consistently vibrant and clean. Barreras Natural balances well between flavors of fresh fruit and dense sweetness, with notes of Blackberry, Tropical Fruit, Plum, and Caramel.
