The lot is comprised from bourbon cherries that are harvested at the best ripeness level and processed at El Borbollon mill as a Natural, sun-drying slowly for about three weeks.
We’ve been working with coffees from the El Borbollon Mill for years now, but this is the first time we cupped coffees from El Guaje, and we’re really excited to share this woman-produced coffee. In the cup, we get the tartness of Hibiscus, Stonefruit, and a freshness of Willd Honey.
