Description: This coffee comes from the Werka Chelchele Washing Station in the Chelchele kebele (community) in Werka, Yirgacheffe. This is possibly the most famous region for coffee production in the world, and it isn’t without merit. Coffee from Yirgacheffe is known for it’s bright citrus and delicate tea-like notes. The region is able to grow coffee at 2,000+ meters above sea level which allows for slow cherry maturation that leads to dense, high quality coffee. More than 500 small holder farmers deliver cherry to this station either directly or through middlemen. Farmers in this area tend to “Garden Coffee” which is typically the size of a backyard, around .5 hectares. Most of the coffee produced in Yirgacheffe is Heirloom varieties, but this lot is made up of Wolisho, Kurume, Dega, 74410, and 74412. Due to the size of the station, they process all types of coffee (washed, natural, and special preparations). The washed coffees, like this one, are first pulped and washed with running water upon delivery to Chelchele. After this, coffee is then fermented for 36-48 hours before being taken to drying beds to dry until moisture reaches 11.5% which takes nearly two weeks, depending on the weather.
