Description: Finca Santa Isabel was founded in 1899 by Federico and Isabel Keller, and is currently under the care of Alex Keller, the fourth generation of the family. The farm has heavy clay loam soils of volcanic origin, and works mainly with Arabica varieties with tolerance to rust. Santa Isabel works with organic and biodynamic practices. It has several organic certifications and is in the process of getting Demeter certification. The farm also produces its own fertilizers, and in a short- term the goal is to become as self-sufficient as possible.

Outside of farm-level practices, the Keller Family also contributes to their community. They sponsor a visit from a doctor biweekly, and also sponsor a school for more than 300 students (unfortunately, this has been closed since COVID). The farm has collaborated with the Municipality of Pueblo Nuevo Viñas, mainly in the maintenance of public roads; and also has 25% of its area registered as a Private Nature Reserve.

This lot is wet and dry-milled at the farm, allowing for excellent quality control. Coffee is fermented for 18-24 hours, and then dried for ~2 weeks on patios. We love working with coffees from Huehue, the profile can be bright and fruity. Along with some Huehue’s from this container, we’re really happy to share this lot from Santa Isabel with notes of Dried Dates, Grapefruit, Caramel, and Hazelnut.

We get our beans from the farms and roast coffee daily. We truly are farm to cup.
