Description: 100+ years ago Don Valentín Villatoro Ventura started planting coffee at Finca Las Rosas. Later Don Efraín took command of the plantations, after him Don Victor Villatoro with his wife Reyna Villatoro, and since 1986 Don Rolando Villatoro, their son, took over the magical treasure. Since Don Rolando took the leadership of the farm, he decided to direct the project to participate in SCA and since then the family has dedicated all its efforts to obtain high quality coffees and exotic varieties. If you ever visit the farm you will be amazed by the garden of coffee gems that you will discover, from Topacio, and various Geishas, to the varieties that we selected, H1 and Parainema. 

Processing is done with rigid standards: after harvest, the cherries undergo a meticulous washing process to remove any debris and potential contaminants. Once they are entirely clean, the coffee cherries are carefully spread out on African beds to undergo the drying process. The duration of drying varies from 20 to 30 days, contingent upon prevailing weather conditions. Throughout this period, the coffees are regularly turned to ensure uniform and consistent drying. After fully dried, coffee is delivered to Dinamica, our export partner based in Guatemala City, where it will be milled and rest, awaiting it’s ship date.

Great Guatemalan!

I am partial to natural Ethiopians, and I roast with a Fresh Roast SR500. I really like this coffee. The beans are larger and very even, roasting goes great and the end product turns out consistent within the roast.
I like to roast around city+ to full city, and this coffee really quenches my thirst for a big smooth mouthfeel with plenty of sweet cacao and muted but jammy fruits. The coffee makes me think of a top notch Colombian or honey processed Honduran. I could see this coffee being a very good espresso, silky smooth and chocolaty. This is a classy coffee.
