Description: El Limon has grown and developed its coffee production in great ways. It’s safe to say that the refined flavors of El Limon are the product of farmer, Arnaldo Ventura Márquez’s hard work and devotion to quality. For Arnaldo, coffee is not only a means for providing for his family, it’s also his lasting legacy to his children. It’s for this reason that he’s planning on planting new coffee varietals to increase the quality of his product and to launch in new markets. El Limon’s clean flavor comes primarily from the way in which it’s processed. The method requires the cherries to be submerged in large water tanks. After being picked, they’re left to ferment for 12 hours. They then “depulp” them, removing any remaining flesh from the cherry, before washing them with clear water. Finally, the cherries are dried on high beds.
