Finca Santa Teresa (FST) is a coffee farm and mill nestled high in the cloud forest near the Volcán Barú; Panama’s highest peak, adjacent to La Amistad National Park, a UNESCO World Heritage Site. The Farm occupies 237 acres of stunning forest between 1400-1900m above sea level.
A regular finalist in the Best of Panama competition, with more than a dozen awards in the last decade, FST produces a range of premium specialty coffees, including Gesha, Caturra, Catuai and Pacamara varietals.
The Farm’s terroir – rich volcanic soils, high altitude, weather systems driven by the Pacific and Atlantic and a series of ridges and valleys – makes for incredible coffee.
Estribi is a plot sitting at 1,475 meters above sea level, who’s trees stand over 15 feet tall. The coffee was processed as a natural, meaning that right after handpicking, it was laid out to dry with the cherries intact. Sun drying naturals in this region is low and slow, a good thing for green coffee shelf life. This coffee is dried on raised beds for 4-6 weeks, and then finished in an oven to ensure even moisture content before it’s hulled.
This one is a testament to FST knowledge of processing. It’s clean and bright, qualities that requires finesse when processing naturals. It cups with fruity notes of raspberry and grape, with the sweetness of plum, and a jasmine floral quality, typical of Panama Geshas.
