Finca Santa Teresa (FST) is a coffee farm and mill nestled high in the cloud forest near the Volcán Barú; Panama’s highest peak, adjacent to La Amistad National Park, a UNESCO World Heritage Site. The Farm occupies 237 acres of stunning forest between 1400-1900m above sea level.

A regular finalist in the Best of Panama competition, with more than a dozen awards in the last decade, FST produces a range of premium specialty coffees, including Gesha, Caturra, Catuai and Pacamara varietals. 

The Farm’s terroir – rich volcanic soils, high altitude, weather systems driven by the Pacific and Atlantic and a series of ridges and valleys – makes for incredible coffee.

Manzana is a Gesha plot, with trees growing under native shade-providing trees, on a steep grade. The trees on this slope are 12 years old and average 15 feet tall. If you want to picture how much work goes into our coffee, imagine this with me for a sec. You’re at 5,000 feet above sea level, on a steep hillside (already too scary), and are carrying a heavy basket full of coffee that you’re handpicking coffee from trees that tower over you at 15 feet tall. Whew. After all this, this lot is brought to the FST mill to be processed as a washed coffee. Cherries are first floated to sort out the lower density fruit, and the sinkers are sent to be depulped and fermented. After fermentation, the coffee is dried for 8-12 days, and kept in parchment until it’s rested enough for shipment.

This one comes across fresh and bright, with notes of cherry, black tea, lime zest, and a sweet finish of milk chocolate.

A very interesting espresso

Perfume complexity with an almost marijuana – like finish. Exceptionally complex smoky note yet surprisingly clean. Outstanding body. I pulled this using my manual flair espresso maker with a higher pressure/ slower draw than normal. With a pump espresso maker, the shot was more subdued but still excellent


I didn't think it lived up to the hype. Don't think I would buy it even at half price again.
