Guatemala Hunapu Processing Pack - Green - Bodhi Leaf Coffee Traders

Guatemala Hunapu Processing Pack - Green

In this Processing Pack, you're getting equal amounts of two green coffees: Hunapu Washed and Hunapu Natural. These are virtually the same coffee right up until the final processing method. The washed was depulped, cleaned free of the mucilage (fruit meat of the coffee cherry), and then dried in parchment. The natural, on the other hand, was laid out to dry, intact, on raised beds, immediately after picking the cherry from the trees.

Description: Hunapu is the indigenous name that ancient Mayans gave to the stratovolcano in Antigua, Volcán de Agua. Our export partner, Zelcafe, works with roughly 300 farmers in this region and embraces this ancient name to represent the coffee they produce. Once ripe cherries have been harvested, it’s delivered to the Bella Vista Mill. At the mill, coffee is first separated by day of picking, variety, and elevation. Once lots are defined, coffee goes through densimetric sorting to remove low density cherries. The ripe, dense cherries are then taken to Bella Vistas newest addition, which is their greenhouses. Drying on raised beds in greenhouses allows for the coffee to dry in a controlled environment, raising the quality and replicability. Once coffee has finished drying it will rest in the warehouse, and is then taken to the dry mill for processing. The coffee is hulled to remove the parchment, sorted by screen size and density, and then goes through an optical sorter to discolored and damaged beans.

We’ve supported the Hunapu lot for a number years, and it’s clear why when you taste these.

We get notes of Black Cherry and Red Apple, the acidity of Grapefruit, and a finish of Nougat out of the Washed Lot.

And this is our first year bringing in Hunapu Natural, and it will not be our last. The cup is clean, and fruity with notes of Banana Bread and Berry Pie, brightness of Lemonade and Raspberry, with a lingering sweetness of Honey.
