Description: Seeing naturals from Uganda is only a recent thing in the specialty coffee world. This is because the region has a stigma built up around naturals coming from the more typical DRUGARS, which are essentially all of the cherries that never ripened  and/or dried on the tree, which they would just finish as a natural. Because of this, naturals were not looked at as an export quality coffee. Enter the Kawacom group who today operates the Sipi Falls Washing Station in eastern Uganda, as well as the Maliba project in the west. They began in 1999, buying and selling coffee producer processed coffees, and completed the build out of Sipi Falls in 2012. By entering the world of processing, the group is able to control the quality of their coffee, and they’ve had big wins by doing this, taking 1st place in the AFCA Taste of Harvest competition in Uganda multiple times with their washed, honey, and natural coffees.

Sipi Falls hosts cherry collection on specific days when the cherry selection is optimal, and will process coffee from specific communities separately. After sorted by community, it’s then laid out in single layers and sorted by ripeness level. Coffee is constantly turned to ensure even drying over the 3 week period that it takes for the coffee to reach approx. 10.5% moisture content.

Uganda doesn’t carry the name recognition in specialty coffee like some other African countries do, but the quality has been making huge leaps. We really love this one, it’s got all of fruitiness and sweetness, you’d want out of a naturally processed coffee from Africa. We get notes of Blueberry and Watermelon as the cup is hot, and as it cools the sweetness starts to pop with flavor reminiscent of Banana Bread and sweet Milk Chocolate.
