Description: Segovia comes from the cooperative Reyna del Cafe de San Juan, which is a nonprofit group. Based in the municipality of San Juan del Rio Coco in the department of Madriz, Nicaragua. The cooperative’s main role is to provide services to farmers in their community, things like financial assistance, quality and productivity improvement, certification services, coffee collection, and exporting certified coffees, like this Fair Trade Organic. Reyna, del Cafe del San Juan was first organized 2002, originally seeing their coffee to a larger group for the first 11 years, and then in 2009 reorganized and began selling their coffee directly, and then exporting their first container in 2014.
As a washed lot, this coffee’s mucilage was removed by a pulper, followed by a short fermentation and then washing to ensure perfectly clean coffee for drying, finishing around 10.5%-11% moisture content.
