Description: Subak is Bali's centuries-old cooperative water system, recognized as a UNESCO World Heritage cultural landscape. It's guided by Tri Hita Karana, the Balinese philosophy of harmony between people and nature, with farmers sharing water through canals led by the temples. Coffee grown within this landscape benefits from that same collective care, which helps sustain farming families across the region.
The lot is Typica and S795, grown at 1,500 to 1,600 meters. Typica is one of the oldest arabica varieties around, and S795 is a rust-resistant selection developed in India that's now widely grown in Indonesia.
The standout here is the fermentation. Whole cherries ferment for 72 hours before drying, and that extended fermentation deepens the sweetness and gives the cup its bold flavor and character.
