Description: Finca Valentina has been in the Mejía family for four generations, tucked into the Montecillos region of Honduras at 1,600 meters. Producer Carlos Mejía Rodríguez named the farm after his eldest daughter, and his son Mario now handles day-to-day operations alongside their neighboring farm, Finca El Jardin. At around 25 hectares, it’s managed as a model farm with a real focus on ecological balance and long-term sustainability, not just for the coffee, but for the families working there. This IHCAFE 90 variety lot was sun-dried for just over 2 weeks and then rested in burlap sacks before prepping for export. The results of the Mejía family’s efforts show in the cup with this lot, we get fruity notes of Blackberry and Strawberry, sweetness of Vanilla Frosting, and the bittersweetness of Dark Chocolate.
