Description: This coffee comes from the Divisa and Sítio Campo farms, located at altitudes of 1,000-1,100 MASL and 1,100-1,300 MASL, respectively. Produced by selected coffee growers, farm-level traceability from the Carmo de Minas region, located in the south of Minas Gerais in the Mantiqueira mountains, is known for its unique conditions for growing specialty coffee. The coffees undergo a rigorous sorting process where all defective cherries are removed using water density control. Once the best cherries are gathered, they are left to dry for 3 days on a patio and then moved to mechanical dryers, where they dry for 72 hours until they reach the desired moisture content.
