Solid budget bean

Ipe is a go-to daily cup for me. Profile is muddy in a light roast, so best to go full-city. Does not have the interesting flavor characteristics of some other beans.

Flat flavor

I have done 3 roasts with this and it still unable to get a decent profile out of it. At this point it is coffee. I roast for low acid and a decent mix between roast flavor and cup notes. First roast was to 420 overall temp, second roast was 430 and final roast was 440. At 440 I was able to get a slightly bolder roast flavor but still no cup notes to speak of. This origin seems to me to be mostly flat due to being an older bean that has been sitting around awhile seeing as the reviews go back to October of 2020.

Great Coffee for creating Blends

Love this coffee. Roast to a Medium for family, the lighter the roast the more the caffeine and Brazil IPE do not disappoint on that. For my own blend that I call Latin Lite Espresso is a most, great flavor, perfect espresso blend, run right after the second crack.. I also use the Ipe to give the touch on my new blend Wild Trio, this has nice and strong flavors with a bright acidity and floral citrus finish.

Solid, predictable, versatile bean

Roasted 15lbs for a coffee stout beer. Found that it was quite nutty around the 403° mark and entered a nice milk chocolate around 417° Where the nuts and chocolate merged. Could probably get more dark choco out of it a bit hotter. Not as complex as some Brazils I’ve used before but certainly a good bean to blend with.

I took advantage of a well priced green coffee. I roast to double crack, found the roasting very fulfilling. I enjoy a morning pour over. I would repeat this purchase !
