Description:This cup profile is labeled “Super Fine Cup” by our export partner for the relatively high cup quality when compared to the “Strictly Soft Fine Cup” (SSFC) label used by Brazilian export grading. This Brazil has a cup profile that can serve as a great base for espresso blends, and can make a great single origin for those looking for a basic coffee that tastes like, well, “coffee”. Brazillian coffees are described by their physical characteristics. This one is an NY 2/3 which stands for “New York 2/3”, and refers to the maximum number of defects allowed; zero primary defects, and a maximum of 9 secondary defects in a 300 gram sample. The numbers 17/18 refer to the screen size, measured in 64ths of an inch.

Because of the relatively flat landscape of coffee farms in Brazil, producers are able to harvest coffee mechanically to speed up the process of picking, making for more cost-effective coffees. This mechanization has made strip picking the norm, but machines are becoming better at harvesting coffee for specialty needs. This means becoming better at handling trees to only pick ripe cherries, and make multiple passes throughout the harvest season, mimicking the process of hand-picking. After picking, cherry is laid in thin layers to dry in the sun, while being turned frequently for even drying.

Great Espresso

The 2023-08-08 reviewer statement, “I'm a fan of traditional espresso…” touched my soft spot. Ordered 1-lb to try & I’m back for more. My initial roast was 215g, sort’n was Gd, #15 toss’d, moisture at 10.9%, volume 312ml, screen size ±18. I used a SR800, with a progression beginning at Fan 9, Heat 1; came to End of Dry at 3:50 (roast chamber temp probe 300° Temp Display 386°), had FCs at 9:15 (roast chamber temp probe 386° & Temp Display 466°) Fan 6, Heat 5. Scooped #4, 2-oz ladles at fcs° + 27° after recovery took roast to SC w/0:16 duration, 0:8 steady, hit C-3 & let sc continue briefly before pouring into my cooling station. Hario cup’d VG hot, Gd warm, Fr tepid; nice sweetness, clean & smooth. A good first roasting but needs finesse, Maillard at 15.9° ror needs bump’n, will next shot for 18°. The solo espresso is VG and solo cappuccino VG-Ex, better than many of my 4-bean blends (natural Brazil, wet hull Sumatra, Central Amer Caturra/Catuai, & African high elev. With my next order I’ll try an espresso roast with my Hottop w/Artisan where I can more easily control the finish & SC duration & degree rise. In the past year I’ve tried 10 different Brazilians, since Len’s Adrano was discontinued; this and one other have been the best.

Nice consistent Brazilian… A flavorful cup. I pull a long espresso and it is smooth and consistent. I roasted to City +. My rating is a 4.5 of 5… I prefer my Brazils with some dark chocolate in the profile.
