Description: Located in the village of La Estrella, Risaralda, Finca La Riviera was born out of a desire to evolve and deepen Julio Madrid’s expertise in the production of exotic coffees. He has earned recognition as one of the top producers of exotic coffees in Colombia, and this farm is his crown jewel where he grows 15+ different varieties. Julio has only been cultivating the Caturra Chiroso variety for two years, and made the decision to plant this variety based on it’s genetic profile and the farms environmental conditions providing the optimal altitude, climate, and soil for its development. Currently Julio only processes the Chiroso variety using his a traditional washed method to honor the essence of the variety, “highlighting the sensory purity and expression of terroir”. After processing the coffee is dried slowly under indirect sunlight for 25 days, and then moved to a mechanical dryer for 5 days.
While his other processes offer surprisingly unique cup profiles, this one is more of a coffee for super coffee nerds (like us) who are interested in tasting a coffee that is derived from a producers specific goal of highlighting terroir and inherent variety characteristics.
