Description: La Reforma sits high in the Apaneca Ilamatepec range in Santa Ana, El Salvador, where the Álvarez family has been growing and exporting coffee for over a hundred years through their own mill, El Borbollon. About seven years ago they planted a small plot of Geisha alongside their established Bourbon — a bet on bringing more organoleptic range out of an already award-winning farm — and this natural lot is part of that newer program. Whole cherries are sorted and floated to sort out underripe and low-density fruit, then dried on African beds for 18-23 days to develop the fruit-forward character natural processing is known for. The trees get the same treatment as the rest of the farm: native and inga shade, sandy loam soil, and both soil and foliar fertilization, all under sustainable practices modeled on Rainforest Alliance standards.
