Description: Cafescor (Cafes Especiales Corquin) is a cooperative founded in 2012 as an initiative of small coffee producers in the town of Corquin, Copan. There are approximately 131 growers who are active members in the coop. Joined together, the cooperative has achieved Fair Trade, USDA Organic, UTZ, and Rainforest Alliance certifications. Beneficio Cafescor is the wet mill that processes specialty organic and conventional coffees in the Northwest Region of Copan.

The cooperative currently has around 400 hectares of cultivated coffee and grows varieties such as Caturra, Catuai (red and yellow), Bourbon, Ihcafe 90, Lempira and Parainema at elevations ranging from 1200 to 1700 meters above sea level.

Copan is a region rich in Honduran cultural history, containing the city of Copan, which is a famous archaeological site for he Mayan Civilization.  Every year, Cafescor sponsors the celebration of the Honduran Children's Day with approximately 400 children benefiting from this event, allowing them to highlight their different educational centers. In 2017, Cafescor donated 250 ecological water filters for their members, educational centers, and health centers of the community.

Great gifts come in small packages!

I drink mainly organic and generally prefer African and Indonesian coffees but occasionally will try one from Central or South America. I was pleasantly surprised at how good this Organic Honduras Copan was. I did a city roast on this bean and it held up nicely. It has a soft mouth feel, is incredibly smooth and balanced from the initial palate flavors across to the finish. I taste caramel notes up front finished with hints of semi-sweet chocolate. This was so good, I ordered another 5 lb bag!

Wow! Loved it!

Quick backstory: I have been roasting various Central American beans lately, so a recent sale encouraged me to try these beans from Honduras (make sure you sign up for emails :) Each coffee is quite different, and taking a flavor tour through the countries has been a lot of fun.

About the coffee: I really LOVED the combination of acidity, sweetness, and chocolate flavors that came out when roasting just up to first hints of second crack. I was wowed! I also roasted a lighter batch. It was very good, just without the chocolate notes. Some brighter flavors can be too striking for my taste, but the sweetness/acidic combination kept me going back for another sip. It really makes your taste buds come alive.

Smooth, With Plenty of Kick

I found this coffee to be very consistent, with hints of fruity taste and full of clarity. What stood out most is that it seems to have twice the caffeine content of other beans. I usually have 4 or 5 servings a day, but I would tap out with 2 or 3 with this bean.
