Description: Fazenda do Salto is managed with dedication by André, Juca, and Otávio Reis, who remain committed to producing exceptional coffee. Combining tradition and innovation, they continuously strive to enhance coffee quality, adopting sustainable practices that respect the environment and value laborers. Sustainability, from the preservation of natural resources to social responsibility, is one of the core principles that guide the farm’s production, ensuring a special coffee, rich in history and care at every stage of the process.
Otavio started this lot off allowing a 62 hour fermentation in sealed bags under shade to prevent overheating. This fermentation is what gives this coffee its very unique character, especially for coffee from Brazil. After fermentation the coffee slowly dried under sunlight, spread out on patios.
