Description: This washed Guji comes from the Shakiso area, where 310 smallholder producers have perfected the art of clean, bright washed processing. The washing station is equipped with modern eco-pulpers and a multi-channel fermentation system that allows for precise control. Producer Biru Bekele and others in the area have invested heavily in water recycling systems and quality control, supporting an ecosystem that produces coffee that is both delicious and environmentally responsible.
Coffee contributed to this lot from Guji is cultivated between 1,900 and 2,100 MASL, conditions that give this lot its clarity and bright acidity. After selective hand-picking, cherries are depulped within six hours of harvest and fermented for 24 to 36 hours depending on ambient temperature. The coffee is then washed through three separate channels to remove any remaining mucilage before moving to raised drying beds, where they dry slowly over around 2 weeks.
