Description: This lot is a natural processed coffee from Echwan Farm, owned and operated by Pak Echwan. He purchased his farm in 2012, in the Bondowoso regency, near the Ruang and Ijen mountains. Pak has become one of the best specialty producers in the region because of his initiative in quality education and processing. To process naturals at Bondowoso, they pick the cherries in their peak ripeness they are cleaned and sorted by flotation, then dried on raised beds. Once they are properly dried, they are hulled and sorted, using a density sorter; then, they are packed and exported.
